Soup Season: Ham & Bean Soup in the Pressure Cooker is Affordable and Delicious


This. Recipe. Is. So. Easy. And. Cheap! I love making this in the winter. It calls for smoked ham hocks, which are a very inexpensive cut- they are essentially soup bones- which I buy and put int he freezer just for this soup. I use great northern beans for this soup, but you can use navy beans or 15 bean soup mix.


If you want a vegetarian version, you can use vegetable broth and use a brand of beans-- Hurst's HamBeens -- which includes a seasoning packet that has a smoke flavor in it that can stand in for the ham hock. They make all kinds of beans and include seasoning packets with them. Some people like diced tomatoes in their soup, but I prefer this one without.


If you have ham hocks, then you really don't need any other seasoning except perhaps some fresh thyme if you have it.


Did I mention how cheap this is? Two ham hocks are about $3, a packet of beans is under $2, and I make my own chicken broth. A whole packet of beans makes a LOT of soup, so it comes out to be less than $1 a serving.


You can also make this in a normal pot, but you will have to soak the beans overnight, rinse, and them cook them for 2 hours on the stove, or the slow cooker for 8 hours. The beauty of the pressure cooker is that you don't have to soak them overnight!
